Mistral in King of Prussia hires Ryland Inn chef to head kitchen

Craig Polignano, 35, had been executive chef for two years at the much-honored Ryland Inn in Whitehouse Station, N.J., after two years as chef de cuisine.

Chef Craig Polignano has been hired to oversee the kitchen at the King of Prussia location of Mistral, the daring, upscale-casual restaurant opening in January at the mall.

Mistral will take ground-floor space beneath Grand Lux Cafe, at the entrance between Neiman Marcus and Lord & Taylor. It's also near Savor, the mall's pavilion of casual restaurants, most of which are chain outposts.

The New Jersey-born Polignano, 35, a Culinary Institute of America grad, had been executive chef for two years at the much-honored Ryland Inn in Whitehouse Station, N.J., after two years as chef de cuisine.

He will work alongside chef de cuisine Ben Nerenhausen, who will continue running the kitchen at Mistral's Princeton flagship, and executive chef/partner Scott Anderson, who operates the sister restaurant elements and oversees Mistral, both in the same building on Witherspoon Street.

The menu's ingredients are to be drawn from the surrounding area.
