Chef Jonathan Petruce out at Cinder, in at Harp & Crown

He will be assisting Harp & Crown executive chef Karen Nicolas at the outlet.

Chef Jonathan Petruce, who joined Teddy Sourias' bar/restaurant orbit last spring, stepped away two weeks ago. Most recently, he was in charge of Cinder, at 15th and Locust Streets.

Petruce has already been snapped up by Michael Schulson, who is empire-building off his current stable of Izakaya in Atlantic City, the seasonal Independence Beer Garden, Sampan, Double Knot, and Harp & Crown.

Petruce will be assisting Harp & Crown executive chef Karen Nicolas at the outset, but he has plenty of opportunities in the hopper. Next for Schulson are Giuseppe & Sons (a South Philly-style Italian, next to Harp & Crown, with the Termini family), a Japanese restaurant with Double Knot's Kevin Yanaga, and Monkitail at the Diplomat in Hollywood, Fla.

Petruce, with his brother, Justin, formerly owned Petruce et al., a LaBan three-beller in Washington Square West. His background also includes M Restaurant, Rae, Meme, and Little Fish.

Update: Petruce's brother Justin tendered his resignation last week from Marquis & Co., where he had been hired as culinary director last fall to tune up menus including those at Bar Bombon and HipCityVeg. He says he's looking for a new job.
