Stephen Starr has been keeping cameras out of Butcher & Singer, his swank meatery replacing Striped Bass at 15th and Walnut. Here's a leaked photo of the doorway. Starr says he's shooting for a Oct. 27 opening.

In other steakhouse news:

Union Trust has delayed its projected public opening at 717 Chestnut St. till Feb. 2. (Wow. Not too long ago, Terry White and Ed Doherty were talking about mid-October.) Partner Terry White tells me that they ran into issues with an elevator shaft, which would have delayed the project till well into November. Rather than open around the hoiliday blitz, they've chosen to hang back.

Last I heard, Del Frisco's, at 15th and Chestnut Streets, said "mid-November." An update on the opening is expected early next week.
