Another vegetarian option:

Mike Jackson, chef/founder of Blue Sage, the well-regarded vegetarian restaurant in Bucks County, has taken the space at 1033 Spring Garden St. that was last Root and previously Palate.

He'll call it Thoreau. Opening Feb. 2.*

Jackson says it'll be similar to Blue Sage in price and concept.

It will start out BYOB but pick up a liquor license (beer/wine) down the road.

So glad to hear it - Horizons has done extraordinarily well, I think it's clear that Philly is receptive to the gourmet vegetarian trend.
