Right there, in John Hancock's round hand, on the Declaration of Independence:

"We hold these truths to be self-evident, that all men are created equal, that they are endowed by their Creator with certain unalienable Rights, that among these are Life, Liberty and the pursuit of Sausage."

History will be made May 1 when the new Hotel Monaco's Red Owl Tavern starts outside dining at Fifth and Chestnut Streets, across from Independence Mall.

In addition to 24 new outdoor seats, executive chef Guillermo Tellez, already known for his house-cured sausages at Red Owl, is developing a seasonal pop-up sausage cart called “Sausage Hombre.”
