Lentil soup and Waldorf salad a 'perfect dinner'

The soup and salad combo was a big hit with the Russell Byers crew. "It's the perfect dinner!" exclaimed Vivien A. Johnson. Most of the kids were unfamiliar with lentils, and some were a little skeptical at first. Chauntisse Ewing was afraid that that they would taste like dirt, for example. But after the first spoonful of soup Ewing was a convert. "It's so good!" she said. While they ate, the students discussed how they might try different variations of the recipe at home. "This would be so good with sausage," suggested Athanasios Mondlak.
