Tortillas worked well as sub for pita bread

Egg salad sandwiches on pita bread and kale, apple & carrot salad was a big hit. We had to sub tortillas for pita bread as we were unable to find them at the store. Everyone loved getting their hands into to both dishes. Massaging the kale with the dressing to get it  ready to eat was fun. Cracking and peeling the eggs was enjoyable as well!
