Tortellini salad savory and sweet

Caytiria Esquilin grates carrots for tortellini salad during the second week of the Spring 2017 My Daughter's Kitchen cooking program at Cayuga Elementary.

We were thrilled to learn about the little cheese-filled gems Italians call "tortellini." "They we're so delicious by themselves; we couldn't wait to complete the meal with colorful and flavorful vegetables and top it with lemon vinaigrette and basil," said Caytiria (grade 4). The Cayuga cooks were hard at work shredding, halving, and "zoodling" the veggies while others helped clean and prep our table. "The pasta was savory while the vegetables and dressing added a sweet touch," said Jazmarie (grade 4). We were all glad to learn that pasta and vegetables could be a cost-effective, delicious and healthy dinner.
