Our group of girls rocked out the beef stir fry. We talked about quinoa and how it is different from rice and how it is from Ecuador. We also talked about different ways to cut up the beef. We decided to go with chunks because it wouldn’t get as tough. Lauriley Vargas, Raquelle Isaac, and Paulette Viegas took charge of stir frying. Samira Espinoza took on quinoa duty and made sure that everyone’s plates had heaping helpings. We liked this better than the Chinese food that we ordered out. The girls were a little skeptical about the quinoa but wound up loving it!
