Baked chicken pairs well with green salad and lemon vinaigrette

Nakira Thorpe, Stephanie Kelly, and Gena Whitaker make a lemon vinaigrette during week 4 of the Spring 2017 My Daughter's Kitchen cooking program at LaSalle Academy.

We are blown away that we have already completed 4 weeks of classes! The children got right to work since this recipe took a bit longer in the oven. We added a tossed salad with spring mix and spinach and had the children mix together a homemade lemon vinaigrette dressing.  They were very pleased with the outcome! They learned that they can fine tune the dressing to their own specific tastes.

We also had great results with the chicken and vegetables! Gena Whitaker and Daisy Orr said they would cook this recipe at home. And Brant Paul, one of our pickiest eaters, tried everything and liked it! That's a win!
