Healthy family recipe: Slow-cooker Southwest Chicken

Back to school time can be busy, not leaving much time for home cooked meals. Give this slow-cooker chicken a try. It is packed with fiber and flavor so it is sure to be a hit.

Back to school time can be busy, not leaving much time for home cooked meals. Give this slow-cooker chicken a try. It is packed with fiber and flavor so it is sure to be a hit.

Slow-cooker Southwest Chicken
Servings: 6

3 Boneless, skinless chicken breasts
½ cup fresh lime juice
1 cup and 1 tbsp. fresh cilantro, chopped
2 garlic cloves, minced
½ onion, chopped
1 bell pepper, chopped
1 can(15.25 oz.)  No Salt Added black beans, drained and rinsed
1 can(15.25 oz.)  No Salt Added corn kernels, drained and rinsed
1 tsp cumin
1 tsp black pepper
1 jalapeño, seeded and sliced (optional)

  1. Combine ingredients into slow cooker, except for 1 tbsp. fresh cilantro and jalapeño for topping when finished.  Cook on low for 6-8 hours.

  2. Shred meat when complete.

  3. Serve with two small whole wheat tortillas, top with fresh cilantro and fresh jalapeño (if desired).
