Healthy family recipe: Roasted zucchini

Zucchini is a delicious and nutritious summer time vegetable. Try this quick recipe for a flavorful dish your whole family can enjoy.

Roasted Zucchini

Ingredients:

  1. 2 medium sized zucchini

  2. 1 tablespoon fresh thyme, leaves removed (dried thyme can be substituted)

  3. 2 ½ teaspoons olive oil

  4. ¼ tsp salt

  5. ¼ tsp black pepper

Directions:

1. Preheat oven to 400 F.

2. Clean and cut zucchini into ¼ inch pieces. In large mixing bowl, toss zucchini with olive oil, thyme, salt, and pepper.

3. Spread onto foil lined sheet pan sprayed with non-stick cooking spray. Roast in oven about 5 to 7 minutes.

Serves 4 – Makes 4 cups
