Healthy family recipe: Slow cooker garlic and rosemary chicken with a splash of orange

Slow Cooker Garlic and Rosemary Chicken with a splash of Orange

Ingredients:

  1. 24 oz boneless, skinless chicken breast cut into medium sized pieces

  2. 2 green peppers, washed and diced

  3. 2 onions, peeled and diced

  4. 1 lb red potatoes, washed and diced

  5. 1 butternut squash, cleaned, peeled and diced

  6. 10 cloves of garlic, peeled and crushed

  7. 2 cup low-sodium chicken broth

  8. ½ orange

  9. 1 tbsp honey

  10. 3 tbsp dried rosemary

Directions:

1. Place all ingrediants in slow cooker and cook on high for 2.5 hours or on low for 5-6 hours (or until the internal temperature of the chicken reaches 165 degrees).

2. Squeeze orange juice over chicken.

3. Divide into 10 portions (makes about 10 1 cup servings).
