Simple Cucumber Salad

Ingredients:

  1. 2 cups chopped cucumber (about 1 large cucumber)

  2. ½ cup chopped red onion

  3. ¼ tsp. salt

  4. ¼ cup vinegar

  5. ¼ cup water

  6. ½ tsp. dill weed

  7. ¼ tsp. black pepper

Directions:

Cut up cucumber and onion and mix with all ingredients in a bowl. Let sit for about an hour in the refrigerator before serving.

Serving size ½ cup. Makes 6 servings
