Healthy family recipe: Simple cucumber salad

Looking for a quick and simple recipe as an addition to your lunch or dinner? Give this simple cucumber salad a try.

Simple Cucumber Salad


  • 2 cups chopped cucumber (about 1 large cucumber)
  • ½ cup chopped red onion
  • ¼ tsp. salt
  • ¼ cup vinegar
  • ¼ cup water
  • ½ tsp. dill weed
  • ¼ tsp. black pepper


Cut up cucumber and onion and mix with all ingredients in a bowl. Let sit for about an hour in the refrigerator before serving.

Serving size ½ cup. Makes 6 servings
