Healthy family recipe: Roasted red peppers
Roasted red peppers are a perfect add-on to any sandwich, wrap, salad, pizza, rice, pasta, fish or meat dish.
Roasted red peppers are a perfect add-on to any sandwich, wrap, salad, pizza, rice, pasta, fish or meat dish. This simple recipe is packed with fiber, vitamin C, A and potassium and couldn't get any easier. Give it a try!
Roasted Red Peppers
Ingredients:
3 red peppers, washed, with seeds removed and sliced into ½ inch pieces
2 cloves of garlic, finely chopped
1 sprig of rosemary washed, leaves removed and finely chopped (about 1 tbsp)
2½ teaspoons of red wine vinegar
2 ½ teaspoons of olive oil
Directions:
1. Preheat oven to 375 degrees
2. Place all ingredients into a mixing bowl and thoroughly combine.
3. Place pepper mixture onto a sheet pan and roast the peppers at 375 degrees for 30 minutes or until tender and browned on the edges.
Servings: 4, about ½ cup
