Healthy family recipe: Garlicky chicken, peas and collard greens

Celebrate the start of the New Year with this simple yet tasty dish. This recipe uses chickpeas, but they can easily be substituted for any other kind of high fiber and protein packed legume like black-eyed peas or black beans.

Garlicky Chicken, Peas and Collard Greens

Ingredients:

  1. 1 15.5 oz can chickpeas, drained

  2. 2 teaspoons olive oil

  3. 2 large bunches (about 8 cups) of washed collard greens, chopped into 1" pieces (cut out the stem in the middle, then chop)

  4. 2 boneless, skinless chicken breast cooked and chopped (about 8oz cooked)

  5. 6 garlic cloves, minced

  6. 1 cup low sodium chicken broth

  7. 3 tbsp corn starch

  8. 1 tbsp onion powder

  9. ½ tsp ground black pepper

  10. ¼ cup of grated parmesan cheese

Directions:

1. In a large pan, heat olive oil over medium heat.

2. Add the greens and ½ cup chicken broth. Cover the pan with a lid, and reduce heat to low for 10 minutes. Stir intermittently.
3. Remove the lid and add the chickpeas, chicken and ½ of the garlic and cook for another 5 minutes.

4. Heat remaining broth in the microwave for 1 min. Add corn starch and stir. Ensure that all of the corn starch is completely dissolved and there are no lumps.

5.Add remaining broth, garlic, onion powder and pepper to the greens. Cook on low for an additional 5 minutes or until the broth begins to thicken.

6. Divide mixture into 4  servings (about 1 cup) and sprinkle with parmesan cheese.

7. This can be served alone or over ½ cup of brown rice, cous cous, quinoa or whole wheat pasta.
