Healthy family recipe: Cucumber yogurt dip

This creamy dip pairs well with many meal and snack ideas! Serve with baked falafel and salad as a quick dinner, or serve alongside carrots and celery for a tasty after school snack! Using Greek yogurt as a base (instead of sour cream or mayonnaise) increases the protein content and keeps saturated fat content low - allowing your family to eat healthfully without sacrificing flavor.

Cucumber Yogurt Dip

Ingredients:

  1. 1 cup low fat or fat free Greek yogurt

  2. ½ cup cucumber, chopped into ¼ inch pieces

  3. 1 clove garlic, minced

  4. 2 tablespoons of fresh dill, chopped

  5. ¼ teaspoon salt

  6. ¼ teaspoon ground black pepper

  7. 2 tablespoons of fresh lemon juice (about 1 lemon)

Directions:

1. Combine the yogurt, cucumber, garlic, dill, salt, and pepper in a small bowl. Mix well.

2. Add the lemon juice and stir until dip is creamy.

Serving size: ½ cup
