Healthy family recipe: Banana-rama breakfast muffins

With five grams of protein and four grams of fiber, these nutritious muffins are a wonderful way to start the day!

These muffins are so delicious you would never guess they have no added sugar. With 5 grams of protein and 4 grams of fiber, these nutritious muffins are a wonderful way to start the day!

Banana-rama Breakfast Muffins

Ingredients:

  1. 2 cups of old fashioned oats

  2. 2 teaspoons baking powder

  3. ½ teaspoon salt

  4. 1 cup low fat or fat free milk

  5. 1 cup of bran cereal

  6. 4 egg whites

  7. 1 cup pureed prunes

  8. ¾ cup mashed bananas

  9. 1 teaspoon vanilla extract

  10. ¾ cup blueberries (optional)

Directions:

1. Preheat the oven to 350 degrees F. Prepare a 12 cup muffin tin with cooking spray.
2. In a large bowl, mix the oats, baking powder, and salt together until combined.
3. In a separate medium bowl, mix together the cereal and milk. Let sit together for a few minutes until cereal is soaked through with milk. Then add in the egg whites, prunes, banana, and vanilla extract. Stir well to combine.
4. Add the wet ingredients to the dry ingredients and stir well to combine. OPTIONAL – if using blueberries, mix in now.
5, Divide the batter evenly between 12 muffin cups. Bake for 20-25 minutes, until tops are light brown and toothpick comes out clean. Muffins will be moist.
