Healthy family recipe: Almond-crusted chicken tenders

Kid or adult, who doesn't love crispy chicken tenders every now and then? Whether fresh out of the oven or served over a salad, these tenders pack a huge nutrition punch from their extra protein, healthy fat, and vitamin E from their tasty almond crust.

Almond-crusted chicken tenders

Ingredients:

  1. 1 pound boneless, skinless chicken breasts, cut into 2 inch strips

  2. 1 cup whole, roasted, unsalted almonds

  3. 2 eggs

  4. 1 tablespoon paprika

  5. 2 garlic cloves, minced

  6. 1 teaspoon cumin

  7. ½ teaspoon black pepper

  8. 1 teaspoon cayenne pepper (optional)

Directions:

1. Preheat the oven to 375. Lightly grease a baking sheet with olive oil

2. In a food processor, grind almonds down into a thick almond meal.

3. In a medium bowl, mix the almonds, garlic, and spices

4. Dredge the chicken tenders in egg, then into the almond mixture and place onto the baking sheet

5. Bake the tenders for 15 minutes, flipping halfway through.
