Healthy Recipe: Sunny side-up Avocado BLT

Take a classic for a new spin: here, the BLT becomes Basil, Lemon, & Tomato.  Paired with avocado and 2 sunny-side-up eggs, this is simplicity at its finest!

Ingredients:

  1. 2 eggs

  2. 1 small tomato

  3. 1/4 avocado

  4. 1/4 lemon

  5. 1 handful fresh basil

  6. balsamic vinegar

  7. salt + pepper

  8. chile flakes

  9. olive oil

Directions:

  1. In medium frying pan, drizzle olive oil and heat over medium heat.  Crack 2 eggs and cook until whites are set and yolks are still runny.

  2. Serve with tomatoes, avocado, basil.  Squeeze lemon juice on top, and drizzle with balsamic vinegar.  Season with salt, pepper, and red chile flakes.

  3. Run a knife through the yolks and enjoy!
