Take a classic for a new spin: here, the BLT becomes Basil, Lemon, & Tomato. Paired with avocado and 2 sunny-side-up eggs, this is simplicity at its finest!
- 2 eggs
- 1 small tomato
- 1/4 avocado
- 1/4 lemon
- 1 handful fresh basil
- balsamic vinegar
- salt + pepper
- chile flakes
- olive oil
- In medium frying pan, drizzle olive oil and heat over medium heat. Crack 2 eggs and cook until whites are set and yolks are still runny.
- Serve with tomatoes, avocado, basil. Squeeze lemon juice on top, and drizzle with balsamic vinegar. Season with salt, pepper, and red chile flakes.
- Run a knife through the yolks and enjoy!
