Healthy Recipe: Bahn Mi Chopped Salad
Inspired by the traditional Vietnamese sandwich, this deconstructed version is transformed into a chopped salad, featuring the classic Vietnamese fixings.
Inspired by the traditional Vietnamese sandwich, this deconstructed version is transformed into a chopped salad, featuring the classic Vietnamese fixings tossed in a healthified version of the famous sriracha mayo for a creamy and spicy salad dressing. Get ready, this salad is bursting with flavor and texture in every bite.
Ingredients:
For the Salad:
1 cup of greens, chopped
1/4 cup carrots, diced
1 radish, sliced
1/4 cup cucumber, diced
1/4 avocado, diced
1 scallions, sliced
1 nori sheet, crumbled into pieces
1/2 Tbsp jalapeno, thinly sliced
1/4 cup fresh cilantro, chopped
sprinkle of toasted sesame seeds
Protein:
Incorporate your protein of choice: diced chicken or pork, cubed tofu, chopped hard boiled egg, quinoa, or edamame all work well
For the Dressing:
1/4 cup greek yogurt
1 lime zest + juice
1 tsp sriracha
1/2 tsp tamari
1/4" ginger, grated
1 garlic clove, minced
1 tsp rice vinegar
1 tsp toasted sesame oil
Whisk together dressing ingredients. Toss salad ingredients and protein together with dressing. Top with toasted sesame seeds, and garnish with cilantro.
