Kaitlin Lunny, owner and blogger of I Can Cook That, has a recipe for chili that she describes as so hearty, you won’t even miss the meat.

The chili features three types of beans (red kidney, great northern, black turtle), dried peppers (guajillo, chipotle, ancho) and bell peppers (green, yellow, orange)­– hence the name, “tri-vegetarian” chili.

Lunny writes that the peppers will give the chili a subtle heat and suggests topping it off with cheese and a dollop of sour cream.

    that vegetarian chili sounds great! it would be even better with a pound and a half of ground buffalo
