Eyebrows went skyward last year when Jim Caiola and David Salama - owners of Beau Monde at Sixth and Bainbridge Streets - won the right to redevelop New York City's Tavern on the Green, which closed in bankruptcy six years ago.

The New York Times Sunday Magazine (Oct. 20) has a wonderfully detailed piece by Max Chafkin on their plans. The Central Park restaurant is supposed to reopen in late December.
Aside from the couple's over-the-top search for serving forks, the financial stuff is fascinating: "Caiola's initial projection for next year called for Tavern on the Green to take in more than $17 million, serving 600 sit-down meals a day on weekdays and 1,200 on weekends with an average restaurant check of $50 per person, not including tax and tip. That's quite a step up from Creperie Beau Monde, which, according to Caiola, makes a comfortable profit on about $2 million a year."
