Eclair with a Philadelphia inspiration

There's Philadelphia cream cheese in it.

Le Méridien, the hoteliers, have started a global éclair program in partnership with pastry chef Johnny Iuzzini.

In sum, each hotel offers three signature flavors – coffee, chocolate and vanilla – as well as one locally inspired flavor.

There's a Texas Honey Pecan éclair at Le Méridien Dallas; a Dulce de Leche éclair, infused with coconut, at Le Méridien Panama; a savory éclair with goat cheese, cranberry and pumpernickel crumbs at Le Meridien in Munich; and a citrus-inspired pastry with mango, lime and ginger at Le Méridien Bangkok.

Philly's, executed by executive chef Sonny Ingui, is dubbed Strawberry Cream – fresh strawberry and Philadelphia cream cheese mousse, with cream cheese icing. (Philadelphia cream cheese, alas, is Philadelphia only in name.)

The éclairs are put out each morning on the bar around 7 a.m. and tend to go fast.
