Evangeline Janus, 91, owned Greek restaurant
Evangeline Janus, 91, co-owner of Konstantino's, a Greek restaurant on Head House Square, died of pneumonia April 23 at Meese Countryside Hospital in Clearwater, Fla., where she had lived since 1996. She was a longtime resident of West Philadelphia.
Born in what is now Society Hill, as a child Mrs. Janus moved to California, where she attended school.
In 1932, she married John Janus, a Turkish-born chef, who was a former Greek merchant marine. The couple worked in the restaurant business in Philadelphia for five decades.
"During World War II, my mother, who was a beautiful, distinguished woman, raised funds for Greek war relief," said son Constantine. "My parents were outgoing and friendly."
In 1970, when Mrs. Janus and her husband opened Konstantino's, a restaurant at the corner of Second and South Streets modeled after a Greek taverna, it was among the early establishments that helped boost the fortunes of the Head House Square area.
Over the years Konstantino's attracted notables including Peter Falk, John Cassavetes and the former Princess Irene of Greece.
"My father prepared a Greek ratatouille with potatoes, mushrooms, green beans and eggplant for Princess Irene, who was a vegetarian," said son Constantine. Other specialties of the restaurant included wine-marinated octopus and moussaka, a baked layered eggplant dish with ground lamb and a cheese bechamel sauce.
"Mother ran the front end of the restaurant while our father ran the kitchen," said daughter Joanne Laios. Their daughter Cleo Sabato (now deceased) sang Greek songs accompanied by bouzouki music. It was a family affair.
"Our mother was the matriarchal preservationist of the family history," Laios said. "She was loved dearly."
The 85-seat, white-stucco restaurant closed in the late 1970s.
In addition to her son and daughter, Mrs. Janus is survived by three grandchildren and two great-grandchildren. Her husband died in 1989.
Services were Friday.
