Wampanoag Pop Tart

Makes 16 2-inch squares

1 cup sweetened dried sour

   cherries

1 cup sweetened dried

   cranberries

1 cup raisins

1 cup whole milk

1 cup brown sugar

1 cup yellow corn meal

Maple syrup or honey for

   serving (optional)

1. In medium, thick-gauged sauce pan over medium-low heat, simmer dried fruits in milk until they are scalded. Add sugar and stir until it is dissolved. Slowly add corn meal, stirring constantly with a wire whisk to avoid lumps. Stir for approximately 8 to 10 minutes. Mixture should take on a consistency similar to mashed potatoes.

2. Spread the mixture out evenly on a generously greased 8-inch square pan. Cover with plastic wrap and refrigerate overnight.

3. With a sharp knife, cut the cornmeal into 2-by-2-inch squares. Place the squares under a preheated broiler for approximately 2 minutes, reheating the bars and turning them golden-brown on top. Drizzle maple syrup or honey over the squares and serve warm.
