* A calorie-burning bike tour of cheesesteak emporiums? Why didn't we think of that? Maybe because we aren't cheesesteak scholars like Carolyn Wyman, author of "The Great Philly Cheesesteak Book" (Running Press, $15.95). The free ride begins at noon Saturday at Sonny's Steaks (228 Market St.) and ends about 6 p.m. at Pat's King of Steaks and Geno's in South Philly. * Fornelletto, the new Italian restaurant by Chef Stephen Kalt, opened this month in the former Ombra space at the Borgata Hotel and Casino (One Borgata Way, Atlantic City, 609-317-1000). The menu features fresh ingredients traditionally prepared, from small bites to multicourse feasts. Kalt also plans Roma, a quick, casual pizza, pasta and panini joint next door. Danny Veltri, a recent winner on Gordon Ramsay's "Hell's Kitchen" reality show, is a Roma sous chef. *
