The new wine makes a splash at these restaurants

Chef Ralph Pallarino will make three dishes using the wine, including rock shrimp baked with lemon, oregano and garlic butter, and a fresh linguini with mild mushrooms, artichoke hearts and oven-roasted tomatoes (see recipe).7 p.m. Tuesday.

Chef Rich Landau of Horizons has created a dish featuring two of Pierre Robert's favorites - tofu and mushrooms - as well as the wine (see recipe). Horizons' a la carte menu will also be available. 7 p.m. May 13.

Chef Andrew Brown is serving up a three-course, $45-a-person menu featuring Kung "Pierre" Tofu, Free-Form Ravioli and Classic Creme Brulee to honor the song spinner.
